You must be hungry…you clicked on my recipes page. I am always collecting them from friends or people I don’t know on the internet. I try them out alter them to my ( or my family’s tastes and that is what is listed below. My son and I are Gluten free and Casein free, so all recipes are GF, CF. I dabble in Paleo (which means grain free) so some use nuts as their base. Maybe some you will enjoy…I am eating everyday, so check back for new recipes.
- Almond banana blueberry muffin (paleo)

1 cup mashed banana
4oz (mini cup) of apple sauce
1/2 cup sugar
1 egg
1 and 1/2 cups almond meal
1/2 cup gluten free flour
1 tsp baking power
1/2 tsp baking soda
2 Tbsp almond milk
1 cup or more of blueberries
Bake 350 for 15 minutes
Makes 12 muffins - Granola (vegan)

4 cups old fashioned oatmeal
1 cup chopped or sliced raw nuts (almonds, cashews, walnuts, pistachios)
½ cup shredded coconut
½ cup sunflower or pumpkin seeds raw
½ cup pure maple syrup
½ teaspoon kosher salt
2 tablespoons canola oil
Heat oven to 350
Mix together the syrup salt and oil.
Add to oatmeal and nuts then stir.
Bake on cookie sheet. After 10minutes, stir.
Then cook approximately 10 minutes more. This will be light brown in color. - Bread (paleo)

2 cups almond flour
2 tablespoons coconut flour
¼ cup golden flax meal
¼ teaspoon salt
½ teaspoon baking soda
5 eggs
1 tablespoon coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar
Mix all ingredients together
Lightly spray silicone bread pan with coconut oil
Bake at 350° for 30 minutes - Pumpkin Muffins (paleo)

1½ cups almond flour
3/4 cup canned pumpkin
3 large eggs
1 tsp baking powder
1 tsp baking soda
½ tsp ground cinnamon
1/8 tsp sea salt
1/4 cup raw honey
2 tsp almond butter
1 Tbs sliced almonds
Preheat oven to 350℉, Coat muffin tins with coconut oil
Mix all ingredients and pour evenly into muffin htins.
Bake for 25 minutes - Cinnamon snack bar (paleo)

1/2 cup creamy almond butter
2 T honey
1 T cinnamon
2 eggs
1 tsp vanilla extract
1/4 t baking soda
Mix all ingredients, spray silicone 8x8 pan with coconut oil spray, pour batter ( it's super thick like frosting. Even out batter to all corners. Bake 325 degrees for about 12 minutes until toothpick comes out clean - Tamale Pie (vegan)

3/4 cup onion, chopped
2 tablespoons olive oil
1 cup cooked rice
1 can chili bean, with liquid
1 can corn, drained
2 (8 ounce) cans tomato sauce
4 teaspoons chili powder
1/2 teaspoon salt
1 package prepared polenta
In large pan sauté onions in olive oil. Add rice, beans, corn, tomato sauce, chili powder, and salt.
Simmer for 15 minutes.
Place rice mixture in a casserole dish and top with sliced polenta.
Bake at 350 degrees for 30 minutes. - Almond cookies (paleo & vegan)

1 cup almond meal/flour
1/4 tsp baking soda
2Tbsp canola
2 Tbsp agave
1/2 tsp vanilla
1/4 chocolate chips
1/4 sliced almonds
Mix together and bake 350, until golden. - Shortbread cookies (paleo & vegan)

2 1/2 cups almond flour
1/4 tsp sea salt
1/4 tsp baking soda
1 cup of pecans, toasted and chopped
5 Tbsp honey
1/2 cup salted butter melted
1 tsp vanilla
Mix dry ingredients together, mix wet ingredients together, combine wet and dry ingredients together. Place dough on wax paper and form a log shape, and put in freezer for an hour.
Slice into thick slices, place on parchment paper or silicone mat, bake 350 for 7-10 minutes. - Peanut butter cookies

1 cup of your favorite Peanut Butter
3/4 cup sugar
1 egg
Mix, drop onto cookies sheet
bake 350 degrees for about 7 minutes
